O kiwi é uma fruta muito apreciada mundialmente, possui alto valor nutritivo e sua produção está em crescimento nas regiões Sul e Sudeste do Brasil. Por ser perecível e delicada, a secagem pode ser uma alternativa interessante para sua conservação. O objetivo deste trabalho foi determinar a cinética de secagem e algumas propriedades químicas do kiwi. A secagem ocorreu em estufa com ventilação forçada de ar, velocidade 1,9 m/s, a 50, 60, 70 e 90 °C. Os dados experimentais foram ajustados através dos modelos exponencial e Fick. Determinou-se o teor de sólidos solúveis, pH e acidez titulável. Um aumento da temperatura de secagem produziu uma diminuição do conteúdo de umidade. O modelo exponencial foi o que melhor se ajustou aos dados experimentais. Os coeficientes de difusão apresentaram valores entre 1,94∙10-10 a 6,94∙10-10 m2/s. A influência da temperatura no coeficiente de difusão foi realizada mediante a correlação exponencial. A amostra fresca apresentou conteúdo de umidade de 84,80 %, base úmida, pH 3,70, acidez titulável 0,97 % e sólidos solúveis 13,1 ºBrix. As amostras secas apresentaram algumas diferenças em termos dessas propriedades.
