Produção de Levana e Levanasacarase Utilizando Subprodutos Agroindustriais como Fonte de Nitrogênio

O objetivo deste trabalho foi avaliar o efeito de diferentes subprodutos agroindustriais (soro de leite, proteína de soja e milhocina) como fontes alternativas de nitrogênio, para aumentar a produção de levana e levanasacarase de Bacillus subtilis natto. Foram testadas diferentes concentrações das fontes e comparadas ao extrato de levedura. A produção de levana foi maior, quando utilizada proteína de soja a 2 e 6 g.L-1 e soro de leite a 6 g.L-1. Entre as fontes alternativas de nitrogênio, a proteína de soja a 6 g.L-1 foi a melhor para atividade da levanasacarase. Os subprodutos testados podem ser uma alternativa viável para aumentar a produção de levana e reduzir custos.
